SPROUTED QUINOA SALAD

This is a yummy salad I prepared and shared with my aqua fit class today and they loved it!  This is called a sprouted quinoa salad.  I noted the recipe below.





Always use organic when available.

1 cup of  sprouted quinoa,
1 bunch of kale shredded in a food processor
6 roma tomatoes (cut out the pulp and save for smoothies) chop tomatoes into small pieces.
3 medium cucumbers unpeeled and chopped.


Mix all ingredients together adding your favorite healthy dressing to taste. I recommend making your dressing from scratch.  I drizzled red wine vinegar and extra virgin olive oil over my salad.

HOW TO SPROUT  (quinoa is one of the easiest grains to sprout)

Soak quinoa in a jar with 2 cups of purified water for 2 - 4 hours. After soaking put the quinoa in a fine mesh sieve,rinse and allow to drain over a bowl. Cover the sieve with a light cloth or paper towel. Complete the rinse and drain process 2-3 times a day until you see a small tail starting to sprout.

When the quinoa has sprouted rinse and drain excess water. mix with other ingredients.

BREAST CANCER AWARENESS MONTH

Before October gets away from me, I want to take some time to acknowledge that October is Breast Cancer Awareness Month, and remind you my dear's that many forms of breast cancer are treatable with early detection being the key to survival.  Ensure that you do monthly breast exams and have timely mammograms as required.  I attached a link with great information for your viewing.   http://www.nbcam.org/

EMPIRE STATE OF PERCEPTION


I recently embarked on a trip to New York City, this was the second time I had the opportunity to visit this grand place and found it just as inspiring as the first.  I took several photos while sight seeing and have one of The Empire State building I want to share with you.


It's commonly known, The Empire States Buildings name was derived from New York being nicknamed The Empire State as it relates to the states wealth and resources.  This building stands 1,454 feet with the superstructures, and looks majestic just standing there in all of it's glory. 
   
Seeing this type of archititure gives you what I would like to call a EMPIRE STATE OF PERCEPTION, similiar to how you feel about life when your mind is clear and your endorphines are beaming.

When you have a EMPIRE STATE OF PERCEPTION  you speak to the person walking toward you in the corridor instead of looking at the wall. 

When you have a EMPIRE STATE OF PERCEPTION you say hello to the person who steps into elevator instead of looking at the floor.

When you have a EMPIRE STATE OF PERCEPTION you can smell spring and fall in the air.

When you have a EMPIRE STATE OF PERCEPTION you walk or take the bus or train instead of driving, not because you have to, but because you want to shine a brighter light on your day and allow the universe to show you something different.

Expand your EMPIRE STATE OF PERCEPTION, give your body wealth and resources by including more fresh fruit and vegetables in your daily diet, drink more water,meditate, excercise and brrrrreath.
